yummy treacle sponge pudding

Deliciously indulgent treacle sponge pudding…

This is the first time I’ve made this pudding so it was a little bit of an experiment! I adapted the recipe from the one I found, doubling the ingredients which meant the cooking time was also extended. If you want a shorter cooking time then I would recommend halving the recipe.

You will need:

Pudding bowl

Golden syrup

Treacle (optional)

150g (6oz) butter

150g (6oz) brown caster sugar

2 eggs

300g (12oz) self raising flour

Milk

Method:

1. Grease a rounded ovenproof dish or pudding basin. Place 3-4 heaped tablespoons of a combination of golden syrup and treacle (if using).

2. Beat the butter and sugar until pale and fluffy.

3. Add the egg and beat together.

4. Fold in the flour and spoon the mixture into the bowl.

To bake: bake for roughly 1 hour at 180c (350f) gas mark 4.

To steam: cover well and seal with greaseproof paper and steam for 2-3 hours.

NB if I was to make this again I would use less treacle and more golden syrup.
