Banana and Raisin Bread

Banana and raisin bread recipe.

Banana bread is one of my favourites. The best way to make something yummy even better? Add raisins! (Or chocolate!!)

This is a really simple recipe to put together, and takes about an hour in the oven, so perfect to prepare before making a meal ready for dessert.

Here’s what you’ll need:

20cm x 12.5cm/8in x 5in loaf tin
285g/10oz plain flour
1 tsp bicarbonate of soda
½ tsp salt
110g/4oz butter
225g/8oz caster sugar
2 free-range eggs
4 or 5 ripe bananas, mashed or sliced
110g/4oz raisins
100ml/3fl oz almond milk (or normal milk mixed with 1½ tsp lemon juice or vinegar)
1 tsp vanilla extract

 

Method:

Pre heat the oven t 180C/Gas 4/350F

Line the loaf tin with greaseproof paper or butter

Cream the butter and sugar in a mixing bowl

Add the flour, salt, bicarbonate of soda, gently mix

Add the eggs, banana, raisins, almond milk and vanilla extract, mix until equal.

Place the mixture in the tin and bake for around an hour until the loaf is well risen and browned.

Remove from oven and tin and leave to cool
